Ingredients
Chicken breast
Bell peppers (red, yellow, green)
Lettuce or mixed greens
Tortillas
Avocado or sour cream
Southwest seasoning (cumin, chili powder, paprika, garlic powder)
Olive oil

Instructions
- In a bowl, mix olive oil, southwest seasoning, salt, and pepper. Coat chicken breasts and refrigerate for 30 minutes.
- Preheat a grill or grill pan to medium-high heat. Grill chicken 6-7 minutes per side or until fully cooked. Let rest, then slice into strips.
- Sauté bell peppers in olive oil for 3-4 minutes until tender-crisp. Season lightly with salt.
