These Southwest Grilled Chicken Wraps are the perfect fusion of smoky, savory, and fresh. Grilled chicken breast, seasoned with a bold southwestern spice blend, is paired with sautéed bell peppers and crisp greens, then wrapped up in a soft tortilla. This quick and versatile dinner is ideal for busy weeknights or meal prep days.


Ingredients

Chicken breast

Bell peppers (red, yellow, green)

Lettuce or mixed greens

Tortillas

Avocado or sour cream

Southwest seasoning (cumin, chili powder, paprika, garlic powder)

Olive oil

Salt and pepper

Optional: black beans, corn, shredded cheese, pico de gallo


Instructions

  1. In a bowl, mix olive oil, southwest seasoning, salt, and pepper. Coat chicken breasts and refrigerate for 30 minutes.
  2. Preheat a grill or grill pan to medium-high heat. Grill chicken 6-7 minutes per side or until fully cooked. Let rest, then slice into strips.
  3. Sauté bell peppers in olive oil for 3-4 minutes until tender-crisp. Season lightly with salt.
  4. Warm tortillas. Layer lettuce, chicken strips, bell peppers, and any additional toppings.
  5. Roll tightly, slice if desired, and serve.
