Ingredients
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
1 cup buttermilk
1 large egg
3 tablespoons melted butter
Optional: powdered sugar or chopped chives for garnish
Instructions
- Preheat oven to 400°F (200°C). Grease a mini muffin tin.
- In a bowl, mix cornmeal, flour, baking powder, baking soda, salt, and sugar.
- In another bowl, whisk buttermilk, egg, and melted butter.
- Pour wet ingredients into dry and stir just until combined.
- Fill muffin tin 3/4 full with batter.
- Bake for 12–15 minutes or until golden and a toothpick comes out clean.
- Cool in pan 5 minutes, then transfer to wire rack. Garnish if desired.
