Description

These Southern Cornbread Poppers are crisp on the edges and tender in the center. They bring classic Southern comfort in bite-sized form, perfect for parties or cozy dinners. A touch of sugar balances the savory corn, and they’re even better with a bit of salsa or honey butter on the side.


Ingredients

1 cup yellow cornmeal

1/2 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon sugar

1 cup buttermilk

1 large egg

3 tablespoons melted butter

Optional: powdered sugar or chopped chives for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Grease a mini muffin tin.
  2. In a bowl, mix cornmeal, flour, baking powder, baking soda, salt, and sugar.
  3. In another bowl, whisk buttermilk, egg, and melted butter.
  4. Pour wet ingredients into dry and stir just until combined.
  5. Fill muffin tin 3/4 full with batter.
  6. Bake for 12–15 minutes or until golden and a toothpick comes out clean.
  7. Cool in pan 5 minutes, then transfer to wire rack. Garnish if desired.
