Description

A tender, flavorful corned beef cooked low and slow with carrots, potatoes, and cabbage, perfect for a cozy dinner or festive celebration. Simple to prepare, deeply satisfying to eat.


Ingredients

34 lb corned beef brisket with spice packet

4 large carrots, peeled and cut into chunks

1.5 lb baby potatoes, halved

1 small green cabbage, cut into wedges

1 large yellow onion, sliced

4 cloves garlic, smashed

4 cups beef broth or water

2 bay leaves

1 tsp peppercorns


Instructions

  1. Layer carrots, potatoes, and onion at the bottom of the slow cooker.
  2. Place corned beef on top, fat side up; sprinkle with spice packet.
  3. Pour broth or water around the meat; add bay leaves, peppercorns, and garlic.
  4. Cover and cook on low 8–9 hours or high 4–5 hours.
  5. One hour before done, add cabbage wedges to the pot.
  6. Remove beef, slice against the grain, and serve with vegetables and broth.
