A tender, flavorful corned beef cooked low and slow with carrots, potatoes, and cabbage, perfect for a cozy dinner or festive celebration. Simple to prepare, deeply satisfying to eat.
Ingredients
3–4 lb corned beef brisket with spice packet
4 large carrots, peeled and cut into chunks
1.5 lb baby potatoes, halved
1 small green cabbage, cut into wedges
1 large yellow onion, sliced
4 cloves garlic, smashed
4 cups beef broth or water
2 bay leaves
1 tsp peppercorns
Instructions
- Layer carrots, potatoes, and onion at the bottom of the slow cooker.
- Place corned beef on top, fat side up; sprinkle with spice packet.
- Pour broth or water around the meat; add bay leaves, peppercorns, and garlic.
- Cover and cook on low 8–9 hours or high 4–5 hours.
- One hour before done, add cabbage wedges to the pot.
- Remove beef, slice against the grain, and serve with vegetables and broth.
