Description

This Simple Strawberry Cheesecake with Fresh Strawberries is a no-bake dessert that combines a buttery graham cracker crust, a light and creamy cheesecake filling, and a glossy topping of fresh strawberries and jam. Ingredients

For the crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the filling:

2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream, cold

For the topping:

2 cups fresh strawberries, hulled and halved

½ cup strawberry jam or preserves, gently warmed


Instructions

  1. In a medium bowl, mix graham cracker crumbs and sugar. Stir in melted butter until combined.
  2. Press the mixture into the bottom of a 9-inch springform pan. Chill while preparing filling.
  3. In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla and mix well.
  4. In a separate bowl, whip cold heavy cream until stiff peaks form.
  5. Fold whipped cream into cream cheese mixture gently.
  6. Spread filling over crust and smooth the top. Refrigerate for at least 6 hours or overnight.
  7. Spread a layer of warmed strawberry jam over the chilled filling.
  8. Arrange halved strawberries on top and drizzle extra jam if desired.
  9. Remove cheesecake from pan, slice, and serve chilled.
