Ingredients
2 cups shredded rotisserie chicken
8 medium tortillas
2 cups enchilada sauce
1 1/2 cups shredded cheese
1/2 cup sour cream
1/4 cup chopped green onions
1/4 cup chopped cilantro
Instructions
1. In a mixing bowl, combine shredded rotisserie chicken, enchilada sauce, sour cream, and cheese
2. Fill each tortilla with the mixture and roll tightly
3. Place enchiladas seam-side down in a baking dish
4. Pour remaining enchilada sauce over the top
5. Sprinkle with remaining cheese
6. Bake at 375°F for 20–25 minutes until bubbly
7. Garnish with cilantro and green onions and serve warm
