Ingredients

2 cups shredded rotisserie chicken

2 cups cooked white rice

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 ½ cups shredded cheddar cheese

1 cup frozen peas and carrots

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large bowl, mix together shredded chicken, cooked rice, cream of chicken soup, sour cream, peas and carrots, garlic powder, onion powder, salt, and pepper until well combined.

3. Transfer the mixture to the prepared dish and smooth it out evenly.

4. Sprinkle cheddar cheese over the top.

5. Bake uncovered for 25–30 minutes until bubbly and golden.

6. Let rest for 5 minutes before serving.

Notes

For a crispier top, broil the casserole for 2–3 minutes at the end of baking.
