Ingredients

1 lb penne pasta

1 lb shrimp, peeled and deveined

4 tbsp butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 ½ cups shredded mozzarella cheese

¼ cup chopped parsley

½ cup breadcrumbs

Salt and pepper to taste


Instructions

1. Bring a large pot of salted water to a boil. Cook penne pasta until al dente, then drain and set aside.

2. In a deep skillet, melt 2 tablespoons of butter over medium heat. Add garlic and cook until fragrant. Add shrimp and cook for 2–3 minutes per side until pink. Remove shrimp and set aside.

3. In the same skillet, add remaining butter, then stir in the heavy cream and Parmesan. Whisk until smooth. Season with salt and pepper.

4. Stir in cooked pasta until well coated. Fold in half the shrimp. Transfer to a greased 9×13-inch baking dish.

5. Top with remaining shrimp, mozzarella, and breadcrumbs.

6. Bake at 375°F (190°C) for 15–20 minutes until bubbly and golden.

7. Garnish with chopped parsley. Serve warm.

Notes

For best flavor, always use fresh garlic rather than pre-minced jarred garlic.

Be sure not to overcook the shrimp—pull them off the heat as soon as they turn opaque.

For extra crunch, broil the top for 2–3 minutes after baking, but watch closely to avoid burning.
