Perfectly juicy with golden-crisp skin, this chicken is infused with lemon, garlic, and fresh rosemary and thyme, making it ideal for any meal from weeknight dinners to dinner parties.


Ingredients

6 bone-in, skin-on chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

1 tablespoon fresh thyme leaves (or 1 tsp dried)

Zest of 1 lemon

Juice of 1 lemon

Salt and freshly ground black pepper, to taste

Optional: Lemon wedges and extra herbs for garnish


Instructions

  1. In a mixing bowl, combine olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, salt, and pepper.
  2. Pat chicken thighs dry and place in a bowl or zip-top bag.
  3. Pour marinade over chicken and massage to coat evenly. Refrigerate for at least 30 minutes.
  4. Preheat oven to 400°F (200°C) and let chicken come to room temperature.
  5. Arrange chicken skin-side up on a baking sheet or skillet. Pour remaining marinade over top.
  6. Roast for 35–40 minutes or until internal temperature reaches 165°F (74°C).
  7. Optional: Broil for 2–3 minutes for extra-crispy skin.
  8. Let rest for 5 minutes before serving. Garnish with herbs and lemon wedges.
