Ingredients

1 pound ground beef

9 ounces cheese tortellini

3 cups fresh spinach

4 cloves garlic, minced

3 tablespoons unsalted butter

1 tablespoon olive oil

1/4 teaspoon crushed red pepper flakes (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup grated Parmesan cheese


Instructions

1. Heat olive oil in a large skillet over medium-high heat.

2. Add the ground beef, season with salt and pepper, and cook until browned, breaking it up with a spoon.

3. Reduce heat to medium, then stir in the minced garlic and unsalted butter. Cook until the garlic is golden and aromatic.

4. Add spinach to the skillet and stir until wilted.

5. Boil tortellini according to package directions (if using uncooked), then drain and add to the skillet.

6. Stir the tortellini gently into the beef and spinach mixture. Let everything heat together for 2-3 minutes.

7. Adjust seasoning if needed, then sprinkle with Parmesan cheese and red pepper flakes if using.

8. Serve immediately.

Notes

Don’t overcook the tortellini — it should be just tender to avoid breaking apart in the pan.

For extra creaminess, stir in a splash of heavy cream before adding the Parmesan.

This dish reheats well, but add a tablespoon of broth or water before microwaving to loosen the sauce.
