Ingredients
12 oz linguine pasta
1 lb beef sirloin or ribeye cubes
4 tbsp unsalted butter
4 garlic cloves, crushed or grated
1 cup heavy cream
3/4 cup freshly grated Parmesan cheese
2 tbsp fresh parsley, chopped
1 tsp salt
1/2 tsp cracked black pepper
2 tbsp olive oil
Instructions
1. Pat beef cubes dry, season with salt and pepper, and sear in hot olive oil over medium-high heat until browned on all sides. Set aside.
2. In a large pot of salted water, cook linguine until al dente. Reserve 1/2 cup pasta water and drain.
3. In the same skillet used for beef, lower the heat and melt butter. Stir in garlic and cook until fragrant (about 30 seconds).
4. Pour in heavy cream and let it simmer for 2–3 minutes until slightly thickened.
5. Stir in Parmesan cheese and mix until smooth. Add salt and pepper to taste. If needed, adjust consistency with reserved pasta water.
6. Toss cooked linguine into the sauce, stirring gently to coat the noodles completely.
7. Transfer pasta to serving plates. Top with seared beef cubes, spoon extra sauce over the top, and garnish with chopped parsley and more Parmesan.
Notes
For the best sear, make sure beef cubes are patted completely dry before hitting the pan.
Avoid browning the garlic—sauté it just until it’s fragrant to prevent bitterness.
Freshly grated Parmesan melts smoother and results in a more luxurious sauce than pre-shredded.
