Ingredients
1 cup cooked breakfast sausage
1 cup all-purpose flour
2 teaspoons baking powder
2 tablespoons granulated sugar
1/4 teaspoon salt
2 large eggs
3/4 cup milk
2 tablespoons melted butter
Maple syrup for serving (optional)
Instructions
1. Preheat oven to 375°F (190°C) and grease a 12-cup nonstick muffin tin.
2. In a skillet, cook sausage over medium heat until browned and crumbled. Drain excess grease and set aside.
3. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
4. In another bowl, whisk eggs, milk, and melted butter until smooth.
5. Pour wet ingredients into dry ingredients and mix gently until just combined.
6. Fold in the cooked sausage until evenly distributed.
7. Spoon batter into muffin cups, filling each about 3/4 full.
8. Bake for 15–18 minutes or until golden and a toothpick inserted comes out clean.
9. Cool in the pan for 5 minutes, then transfer to a cooling rack.
10. Serve warm with maple syrup if desired.
