Description
This Sausage Breakfast Casserole brings together golden cornbread, savory sausage, melty cheese, and fluffy eggs into a hearty, comforting dish. It’s perfect for make-ahead brunches or feeding a crowd on busy mornings.
Ingredients
1 pound ground breakfast sausage
6 large eggs
1 cup whole milk
1 1/2 cups shredded cheddar cheese
1 box cornbread mix (about 8.5 ounces)
1 cup sweet corn kernels (canned or frozen and thawed)
1/4 cup chopped green onions or chives
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a skillet, cook the ground sausage over medium heat until browned and fully cooked. Drain excess fat and let cool slightly.
3. In a large bowl, mix the cornbread mix, 2 of the eggs, and 1/2 cup of milk according to package directions.
4. Spread half the cornbread mixture in the baking dish as a base.
5. Top with cooked sausage, sweet corn, and half of the shredded cheese.
6. In a separate bowl, whisk together the remaining 4 eggs, 1/2 cup milk, salt, and pepper. Pour evenly over the sausage layer.
7. Add the remaining cornbread mix on top and sprinkle with the remaining cheese.
8. Bake for 35–40 minutes until golden and set. A knife should come out clean when inserted in the center.
9. Let rest for 10 minutes before serving. Garnish with chopped green onions or chives.
Notes
For a spicier version, use hot sausage or add diced jalapeños.
You can substitute the cornbread mix with homemade cornbread batter.
