Ingredients
12 oz smoked sausage, sliced into rounds
2 large sweet potatoes, peeled and cubed (about 4 cups)
2 tbsp olive oil (divided)
1/4 cup honey
2 tbsp soy sauce
3 cloves garlic, minced
1/2 tsp smoked paprika (optional)
Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- Toss cubed sweet potatoes with 1 tablespoon olive oil and spread on a baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and golden.
- Heat remaining 1 tablespoon olive oil in a skillet over medium-high heat. Add sausage slices and sear for 4-5 minutes until browned. Set aside.
- In a small saucepan, combine honey, soy sauce, and minced garlic. Simmer on low for 2-3 minutes. Stir in paprika if using.
- Add roasted sweet potatoes and sausage to the skillet. Pour sauce over and toss gently to coat. Heat together for 2-3 minutes.
- Garnish with chopped parsley and serve warm.
