Ingredients
1 lb salmon fillet, skinless, cut into bite-size cubes
1 ripe mango, diced
1 ripe avocado, diced
1/4 small red onion, thinly sliced
1 fresh lime, zest and juice
1 tablespoon black sesame seeds
1 tablespoon fresh dill or cilantro, chopped
1 tablespoon olive oil (plus more for drizzling)
2 cloves garlic, minced
1/4 teaspoon chili flakes (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Dice mango and avocado into similar-sized chunks. Thinly slice red onion. Chop herbs, zest the lime, and juice it.
2. In a bowl, gently combine mango, avocado, red onion, herbs, lime juice, a drizzle of olive oil, and salt. Fold gently and chill.
3. Pat salmon dry. Season with salt, pepper, and chili flakes. Heat olive oil in a skillet and cook garlic for 30 seconds. Add salmon and sear each side for 2–3 minutes.
4. Toss warm salmon with lime zest, sesame seeds, and herbs to coat evenly.
5. Layer salsa in bowls, top with warm salmon, sliced avocado, extra sesame seeds, and a drizzle of lime juice and olive oil.
Notes
Make sure your avocado is ripe but still firm — it should hold its shape in the salsa.
Zest the lime before juicing it for the best results and easiest handling.
Don’t overcrowd the pan when cooking the salmon — cook in batches for a perfect sear.
