Description

These soft peanut butter cookies are stuffed with gooey Rolo candies, giving each bite a delightful surprise of chocolate and caramel. Perfect for gifting, sharing, or treating yourself to something special.


Ingredients

1/2 cup peanut butter

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup granulated sugar (plus extra for rolling)

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

24 Rolo candies (unwrapped)


Instructions

  1. In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Gradually mix dry ingredients into the wet mixture until a soft dough forms.
  5. Scoop a tablespoon of dough, flatten it, and wrap it around a Rolo candy. Seal and roll into a ball.
  6. Roll each dough ball in extra granulated sugar.
  7. Place on a parchment-lined baking sheet and chill for 15-20 minutes.
  8. Preheat oven to 350°F (175°C) and bake cookies for 10-12 minutes.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
