Ingredients
1/2 cup peanut butter
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar (plus extra for rolling)
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
24 Rolo candies (unwrapped)
Instructions
- In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into the wet mixture until a soft dough forms.
- Scoop a tablespoon of dough, flatten it, and wrap it around a Rolo candy. Seal and roll into a ball.
- Roll each dough ball in extra granulated sugar.
- Place on a parchment-lined baking sheet and chill for 15-20 minutes.
- Preheat oven to 350°F (175°C) and bake cookies for 10-12 minutes.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
