Ingredients

3 medium sweet potatoes

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons honey

1/3 cup crumbled feta cheese

2 tablespoons chopped fresh mint or parsley


Instructions

1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

2. Peel the sweet potatoes and cut them into 1/2-inch thick rounds.

3. Arrange the rounds on the baking sheet in a single layer.

4. Drizzle the olive oil evenly over the sweet potato slices and brush or spread to coat both sides.

5. Sprinkle salt and pepper evenly across the rounds.

6. Roast in the oven for 25–30 minutes, flipping halfway through, until the edges are golden and the centers are tender.
