Ingredients
1 lb rigatoni pasta
2 cups heavy cream
1 1/2 cups parmesan cheese, grated
4 garlic cloves, minced
4 tbsp unsalted butter
2 tbsp Cajun seasoning
1 1/2 lbs beef sirloin or tenderloin tips
2 tbsp olive oil
2 tbsp fresh parsley, chopped
1 tsp salt
1/2 tsp black pepper
Instructions
1. Boil rigatoni in salted water until al dente. Reserve 1 cup pasta water and drain.
2. Pat steak tips dry and season with Cajun seasoning, salt, and pepper.
3. Heat olive oil in cast iron skillet; sear steak tips on all sides to desired doneness. Remove and rest.
4. In deep skillet, melt butter over medium heat. Add garlic and sauté 1 minute.
5. Pour in heavy cream, stir, then simmer gently.
6. Stir in parmesan cheese until sauce thickens. Adjust seasoning.
7. Add rigatoni to sauce, toss to coat. Add pasta water if needed.
8. Serve pasta topped with steak tips. Garnish with parsley.
