Ingredients

1 lb (450g) rigatoni pasta

1 lb (450g) ground beef

1 tbsp olive oil

1 onion, finely chopped

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 can (28 oz) crushed tomatoes

2 tbsp tomato paste

1 cup beef broth

1/2 cup red wine (optional but recommended)

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for topping)


Instructions

  1. Cook the Pasta: Boil rigatoni in salted water until al dente. Drain and set aside with a drizzle of olive oil to prevent sticking.
  2. Prepare the Sauce Base: Heat olive oil in a skillet over medium heat. Sauté onion, garlic, carrots, and celery for 5-7 minutes until softened.
  3. Cook the Beef: Add the ground beef to the skillet. Cook until browned, breaking it apart as it cooks. Drain excess grease if necessary.
  4. Build the Sauce: Stir in tomato paste and cook for 1-2 minutes. Add crushed tomatoes, beef broth, red wine (if using), oregano, basil, salt, and pepper. Stir well.
