Ingredients
3 tablespoons olive oil
4 cloves garlic, minced
1 large onion, diced
½ teaspoon crushed red pepper flakes
½ cup dry white wine
4 cups seafood or fish stock
1 can (28 oz) diced tomatoes
½ pound firm white fish (like cod), cut into chunks
1 pound mussels, cleaned
1 pound clams, cleaned
½ pound large shrimp, peeled and deveined
¼ cup fresh parsley, chopped
¼ cup fresh basil, chopped
Salt and pepper to taste
Instructions
1. Heat olive oil in a heavy pot over medium heat. Sauté onions, garlic, and red pepper flakes until fragrant.
2. Deglaze the pot with white wine, scraping up browned bits. Add diced tomatoes and seafood stock. Simmer 15-20 minutes.
3. Add firm white fish, then mussels and clams. Cover and cook until shells open. Add shrimp last, cooking until pink and opaque.
4. Season with salt and pepper. Stir in parsley and basil. Ladle into bowls and serve with crusty bread.
Notes
Bring the seafood to room temperature before cooking for even doneness.
Always discard any mussels or clams that do not open after cooking.
For a richer broth, add a knob of butter just before serving.
