Ingredients
120g cream cheese
50g powdered sugar
1 tsp vanilla extract
1 egg
12 mini pastry shells or puff pastry circles
12 fresh raspberries
Instructions
1. Preheat oven to 180°C (350°F). Line mini muffin tin with pastry circles, pressing gently to form cups. Prick bottoms with a fork.
2. In a bowl, beat cream cheese, powdered sugar, egg, and vanilla extract until smooth.
3. Pipe or spoon mixture into pastry cups, filling three-quarters full. Top each with a raspberry.
4. Bake 15–20 minutes or until pastry is golden and filling is set.
5. Cool slightly. Dust with powdered sugar before serving.
Notes
For extra crunch, brush the pastry with egg wash before baking.
To avoid sogginess, let the pastry cool fully before adding filling.
Swap in mascarpone or ricotta for a fun flavor variation.
