Description

These Quick Chicken Tacos are your weeknight dinner fix—fast, flavorful, and totally customizable. With juicy spiced chicken, vibrant pico de gallo, creamy avocado, and soft charred tortillas, every bite is fresh and satisfying. This recipe is done in under 30 minutes and perfect for family-style serving or easy meal prep.


Ingredients

1 lb chicken breast or thighs

1 tbsp olive oil

1 tsp chili powder

1 tsp ground cumin

1 tsp paprika

1 tsp garlic powder

½ tsp salt

¼ tsp black pepper

8 small corn or flour tortillas

1 fresh lime

1 cup pico de gallo (chopped tomato, onion, cilantro)

1 avocado or ½ cup guacamole

¼ cup sour cream or Greek yogurt (optional)


Instructions

1. In a mixing bowl, combine the chicken with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss to coat evenly and let marinate for 10 minutes.

2. Heat a cast iron skillet or grill pan over medium-high heat. Cook the chicken for 5–7 minutes per side, or until fully cooked and golden brown. Remove and let rest. Slice thinly if whole.

3. Warm tortillas in a dry skillet or over an open flame for 15–20 seconds per side, until soft and lightly charred.

4. Assemble tacos by adding sliced chicken to each tortilla. Top with pico de gallo, avocado or guacamole, and a dollop of sour cream if using.

5. Finish with a squeeze of lime and serve immediately. Add hot sauce or extra cilantro to taste.

Notes

Use chicken thighs for extra juiciness if you don’t mind slightly longer cook time.

Lightly charring tortillas adds great texture and smoky flavor—don’t skip it!
