Ingredients

1 pound ground beef

1 cup long grain white rice

1 green bell pepper, diced

1 red bell pepper, diced

1 medium yellow onion, diced

3 cloves garlic, minced

2 tablespoons Cajun seasoning

2 1/2 cups chicken broth

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley or green onions (optional)


Instructions

1. In a large skillet, brown the ground beef over medium heat. Break it up as it cooks, then drain excess fat if needed.

2. Add olive oil, then stir in the diced onions, bell peppers, and garlic. Sauté for 5 minutes until soft and aromatic.

3. Sprinkle in Cajun seasoning, salt, and pepper. Stir well to coat everything in spice.

4. Pour in the uncooked rice and mix to evenly coat with the flavor base.

5. Add chicken broth and bring to a gentle boil.

6. Reduce heat to low, cover the skillet, and simmer for 18–20 minutes until rice is fully cooked and tender.

7. Fluff with a fork and top with fresh parsley or green onions before serving.

Notes

For an authentic Louisiana flavor, try adding 1/4 cup finely chopped chicken liver with the beef.

If using brown rice, increase the broth to 3 cups and extend cooking time to 35–40 minutes.

You can double the batch easily for meal prep—just use a deeper pot or Dutch oven to hold the extra volume.
