Ingredients
2 ½ cups powdered sugar
⅓ cup sweetened condensed milk
1 teaspoon peppermint extract
1 ½ cups semi-sweet chocolate chips
1 tablespoon coconut oil (or vegetable shortening)
2 tablespoons crushed candy canes (optional, for topping)
Instructions
1. In a large mixing bowl, combine powdered sugar, sweetened condensed milk, and peppermint extract. Beat with a mixer until a smooth, non-sticky dough forms.
2. Roll into balls, then flatten into discs. Place on a parchment-lined baking sheet and chill for 10 minutes.
3. In a microwave-safe bowl, melt chocolate chips and coconut oil in 20-second intervals, stirring between until smooth.
4. Dip each peppermint disc in the melted chocolate using a fork. Tap off excess and place back on the baking sheet.
5. Sprinkle crushed candy canes over the top if using. Let them set at room temperature or refrigerate for 5 minutes until firm.
