Description

Juicy chicken breast and sweet pineapple chunks, marinated in a zesty honey-soy blend and grilled to perfection. These kabobs deliver bold flavor and bright color, ideal for cookouts, weeknight dinners, or tropical-themed meals.


Ingredients

2 large chicken breasts, boneless and skinless

2 cups fresh pineapple chunks

3 tablespoons soy sauce

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh chives or cilantro (optional)


Instructions

1. In a mixing bowl, whisk together soy sauce, honey, garlic, ginger, olive oil, lime juice, salt, and pepper.

2. Cut chicken into bite-sized chunks and place them in the marinade. Let sit for at least 30 minutes (up to 4 hours).

3. Soak wooden skewers for 30 minutes (if using) to prevent burning.

4. Thread chicken and pineapple alternately on skewers.

5. Preheat grill or grill pan over medium-high heat and oil the grates.

6. Grill skewers for 10-12 minutes, turning every few minutes and basting with extra marinade.

7. Once cooked and slightly charred, remove from grill.

8. Garnish with chives or cilantro if desired and serve warm.

Notes

Use fresh pineapple for optimal caramelization and texture—canned pineapple tends to be softer and wetter.

Avoid marinating the chicken overnight if using citrus (lime) to prevent the meat from getting tough.

If you don’t have a grill, bake them at 400°F for 20–25 minutes, flipping once.
