This creamy, colorful Pea Salad is a cool and crunchy side dish perfect for potlucks, BBQs, or easy weeknight meals. Bursting with sweet peas, sharp cheddar, crispy bacon, and red onions, it’s tossed in a tangy, creamy dressing that’s both satisfying and refreshing.
Ingredients
2 cups green peas (fresh or frozen)
1 cup cheddar cheese, cubed
1/2 cup red onion, diced
1/2 cup crispy bacon, crumbled (optional)
1/3 cup mayonnaise
1/4 cup sour cream
1 tablespoon apple cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Rinse frozen peas under cold water until thawed and drain thoroughly. If using fresh peas, blanch for 1–2 minutes, then cool immediately.
2. Dice red onion and cube cheddar cheese into small bite-sized pieces. If using bacon, cook and crumble.
3. In a separate bowl, whisk together mayonnaise, sour cream, apple cider vinegar, salt, and pepper until smooth.
4. In a large bowl, combine peas, cheese, onions, and bacon. Pour dressing over the top and gently fold until well combined.
5. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
Notes
For best texture, do not cook frozen peas—just rinse under cold water to thaw.
Make it vegetarian by skipping the bacon or substituting crispy chickpeas.
