Ingredients
12 oz rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup Kalamata olives, pitted and halved
1/4 cup red onion, thinly sliced
1/4 cup chopped fresh parsley
1/4 cup grated Parmesan cheese
3/4 cup Italian dressing (store-bought or homemade)
Instructions
- Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente.
- Drain and rinse the pasta under cold water to cool.
- In a large bowl, combine pasta, tomatoes, cucumber, olives, red onion, and parsley.
- Pour in the Italian dressing and toss until everything is well coated.
- Chill the salad for at least 30 minutes before serving.
- Before serving, toss again and sprinkle with grated Parmesan cheese.
