Description

Parmesan Baked Yellow Squash is a golden, cheesy side dish made with fresh yellow squash and just a few pantry staples. Crisped under the broiler and seasoned simply, it’s a quick, gluten-free recipe perfect for showcasing garden squash. Great with grilled meats or as part of a vegetarian spread.


Ingredients

1 lb yellow squash

2 tbsp olive oil

1/2 cup freshly grated Parmesan cheese

1/2 tsp garlic powder

1/4 tsp salt

1/4 tsp black pepper

1 tbsp fresh parsley or thyme (optional, for garnish)


Instructions

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Wash and dry the yellow squash. Trim ends and slice into 1/4-inch rounds.

3. In a mixing bowl, toss the squash slices with olive oil, garlic powder, salt, and pepper.

4. Arrange the squash slices in a single layer on the prepared baking sheet.

5. Sprinkle the grated Parmesan evenly over each slice.

6. Bake for 20 minutes, until the squash is tender.

7. Broil for 2–3 minutes to crisp up the Parmesan tops.

8. Remove from oven, garnish with herbs if using, and serve hot.

Notes

Use freshly grated Parmesan for best melting and crisping—avoid pre-shredded types.

For added crunch, place the baking sheet closer to the broiler during the last 2 minutes.

To prevent sogginess, ensure squash is sliced evenly and avoid stacking pieces.
