Ingredients
1.5 lbs chicken breast or thighs, cut into chunks
1.5 lbs baby red potatoes, quartered
3 tbsp olive oil
2 tbsp Cajun seasoning
4 cloves garlic, minced
2 tbsp fresh parsley, chopped
1/3 cup Parmesan cheese, grated
Instructions
1. Preheat oven to 425°F (220°C). Cut chicken and potatoes into bite-sized chunks. Mince garlic.
2. In a large bowl, combine chicken, potatoes, olive oil, Cajun seasoning, and garlic. Toss until evenly coated.
3. Spread the mixture onto a large baking sheet in a single layer, avoiding overcrowding.
4. Roast for 25–30 minutes, flipping halfway, until chicken is cooked through and potatoes are golden.
5. Garnish with parsley and Parmesan before serving.
Notes
For crispier potatoes, ensure they are well spaced on the baking sheet.
Use freshly grated Parmesan for the best flavor and melting quality.
If you prefer less heat, opt for a mild Cajun seasoning blend or reduce the amount used.
