A cozy, one-pot take on classic lasagna, this soup is hearty, cheesy, and loaded with Italian flavor. It’s made with ground beef, tender noodles, and a rich tomato broth, then topped with melty mozzarella and creamy ricotta. Comfort food doesn’t get easier—or more delicious—than this.
Ingredients
1 pound ground beef
1 medium yellow onion, chopped
3 cloves garlic, minced
1 tablespoon tomato paste
1 can (28 ounces) crushed tomatoes
4 cups beef broth
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
8 lasagna noodles, broken into pieces
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese (optional, for topping)
2 tablespoons chopped fresh parsley or basil
Instructions
1. In a large Dutch oven or heavy-bottomed pot, heat a drizzle of oil over medium heat. Sauté the chopped onions until translucent.
2. Add garlic and cook until fragrant, about 30 seconds.
3. Stir in ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if needed.
4. Add tomato paste, crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
5. Bring to a gentle simmer. Add broken lasagna noodles and cook until tender, about 10-12 minutes, stirring occasionally.
6. Stir in half the mozzarella to melt into the soup.
7. Ladle soup into bowls, top with remaining mozzarella, a dollop of ricotta, and a sprinkle of fresh herbs.
Notes
Break the noodles into even pieces so they cook uniformly and resemble mini lasagna bites.
Add extra broth when reheating, as the noodles will absorb liquid over time.
For a vegetarian version, substitute mushrooms or lentils and swap beef broth for veggie broth.
