Description

This One-Pot Creamy Cabbage Soup is the ultimate cozy dinner. It features tender cabbage, hearty potatoes, and smoky sausage in a rich, creamy broth. Everything cooks in a single pot, making cleanup simple and the flavors extra deep.


Ingredients

2 tablespoons butter

1 tablespoon olive oil

1 medium onion, chopped

2 celery stalks, diced

2 carrots, diced

3 garlic cloves, minced

12 oz smoked sausage or kielbasa, sliced

1 small head of green cabbage, chopped

3 medium Yukon gold potatoes, cubed

5 cups chicken broth

1 cup heavy cream

Salt and pepper to taste

Red pepper flakes (optional)

Fresh parsley, for garnish


Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Add onion, celery, and carrots. Cook until softened, about 5-7 minutes. Add garlic and cook 30 seconds more.
  2. Add the sliced sausage and brown it for a few minutes.
  3. Stir in chopped cabbage and potatoes. Mix to coat with the base.
  4. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes.
  5. Stir in heavy cream and simmer uncovered for 5 minutes more. Season with salt, pepper, and optional red pepper flakes.
  6. Serve hot, garnished with chopped parsley and a sprinkle of black pepper.
