Description
A creamy and spicy one-pot pasta dish that combines seared Cajun chicken, tender broccoli, and fusilli tossed in a rich Alfredo sauce. Perfect for quick weeknight comfort food!
Ingredients
2 tablespoons olive oil
1 tablespoon butter
2 large chicken breasts, sliced
1 tablespoon Cajun seasoning
3 cloves garlic, minced
2 ½ cups chicken broth
2 ½ cups fusilli or penne pasta
2 cups broccoli florets
1 cup heavy cream
1 cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Heat olive oil and butter in a large skillet over medium-high heat.
2. Season chicken with Cajun seasoning and sear until golden and cooked through. Remove and set aside.
3. In the same skillet, add minced garlic and sauté until fragrant.
4. Pour in chicken broth and bring to a simmer.
5. Add uncooked pasta, stirring occasionally, and cook until most liquid is absorbed.
6. Add broccoli during the last 4-5 minutes of pasta cooking.
7. Lower the heat, pour in heavy cream, and stir in Parmesan cheese until creamy.
8. Return chicken to the pan and stir everything to coat evenly.
9. Serve warm, optionally garnished with parsley.
Notes
Searing the chicken first locks in flavor—don’t skip it.
If reheating, add a splash of broth or cream to revive the sauce.
You can substitute the broccoli with spinach or zucchini for variation.
