Ingredients
300g smoked sausage
2 bell peppers (yellow, red, or orange), diced
1 medium onion, diced
3 cups cooked rice
3 cloves garlic, minced
1 tablespoon Cajun seasoning (or to taste)
2 tablespoons olive oil
2 tablespoons fresh parsley or cilantro, chopped
1 lime, cut into wedges
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Add sliced smoked sausage and sear until edges are crisp and browned. Remove and set aside.
3. In the same skillet, sauté diced bell peppers and onion until softened and slightly caramelized. Add minced garlic and stir for 30 seconds.
4. Fold in the cooked rice, mixing well to absorb pan flavors. Sprinkle Cajun seasoning and toss evenly.
5. Return sausage to skillet, stir everything together, and let heat for a few minutes.
6. Remove from heat, sprinkle with fresh herbs, and serve with lime wedges.
Notes
For a low-carb version, swap in cauliflower rice.
