This One-Pan Smoky Spicy Chicken & Rice Bake is your go-to weeknight dinner for bold flavor and easy cleanup. Tender chunks of chicken simmer with aromatic spices, tomato paste, and fluffy rice to create a rich, comforting dish. With just one pan and a handful of ingredients, you get a complete, satisfying meal with a smoky, spicy twist.


Ingredients

1 ½ lbs boneless, skinless chicken breast, cut into bite-sized chunks

1 tablespoon olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

1 cup long-grain white rice (uncooked)

2 ½ cups low-sodium chicken broth

1 tablespoon tomato paste

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and black pepper to taste

Optional garnish: chopped cilantro or green onions


Instructions

  1. Sauté Aromatics: Heat olive oil in a large oven-safe skillet over medium heat. Add onion and cook for 3–4 minutes. Add garlic and cook for 1 more minute.
  2. Cook Chicken: Add chicken, season with half the spices, and cook for about 5–6 minutes until no longer pink.
  3. Toast the Rice: Push chicken aside, add rice, and toast for 2–3 minutes, stirring occasionally.
  4. Add Liquid: Pour in chicken broth and tomato paste. Stir to combine. Add remaining spices and mix thoroughly.
  5. Bake: Preheat oven to 375°F (190°C). Cover the skillet tightly with foil or a lid. Bake for 25–30 minutes, or until rice is tender.
  6. Rest and Serve: Let rest for 5 minutes. Fluff with a fork and garnish with cilantro or green onions.
