One Pan Lemon Chicken with Butter Sauce

Description

Golden seared chicken thighs simmered in a buttery lemon garlic sauce, all made in one skillet. This dish delivers bright citrus flavor balanced with savory herbs, perfect for a comforting and elegant dinner.


Ingredients

4 bone-in, skin-on chicken thighs

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup chicken broth

2 tablespoons fresh lemon juice

1 lemon, thinly sliced

3 tablespoons unsalted butter

Salt and cracked black pepper, to taste

1 tablespoon chopped fresh parsley (optional garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear chicken thighs skin-side down for 5-6 minutes until golden and crispy. Flip and sear other side for 3-4 minutes. Remove from pan.
  3. Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds.
  4. Deglaze the pan with chicken broth, scraping up any brown bits.
  5. Stir in lemon juice and lemon slices. Add butter and let it melt into the sauce.
  6. Return chicken to the skillet, skin-side up. Spoon some sauce over each thigh.
  7. Partially cover and simmer on low for 20-25 minutes until chicken is cooked through.
  8. Uncover and simmer for a few extra minutes to reduce sauce, if desired.
  9. Garnish with chopped parsley and extra lemon slices. Serve warm.
