Golden seared chicken thighs simmered in a buttery lemon garlic sauce, all made in one skillet. This dish delivers bright citrus flavor balanced with savory herbs, perfect for a comforting and elegant dinner.
Ingredients
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
3 cloves garlic, minced
1/2 cup chicken broth
2 tablespoons fresh lemon juice
1 lemon, thinly sliced
3 tablespoons unsalted butter
Salt and cracked black pepper, to taste
1 tablespoon chopped fresh parsley (optional garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken thighs skin-side down for 5-6 minutes until golden and crispy. Flip and sear other side for 3-4 minutes. Remove from pan.
- Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds.
- Deglaze the pan with chicken broth, scraping up any brown bits.
- Stir in lemon juice and lemon slices. Add butter and let it melt into the sauce.
- Return chicken to the skillet, skin-side up. Spoon some sauce over each thigh.
- Partially cover and simmer on low for 20-25 minutes until chicken is cooked through.
- Uncover and simmer for a few extra minutes to reduce sauce, if desired.
- Garnish with chopped parsley and extra lemon slices. Serve warm.
