Ingredients
6 bone-in, skin-on chicken thighs
1.5 lbs baby potatoes, halved
4 garlic cloves, minced
4 tablespoons butter, melted
1/2 cup grated Parmesan cheese
1 tablespoon Italian seasoning
Salt and black pepper to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- In a bowl, mix melted butter with garlic, Italian seasoning, salt, and pepper.
- Toss chicken thighs and baby potatoes in the garlic butter mixture.
- Spread evenly on the baking pan, skin side up.
- Sprinkle parmesan over the chicken and potatoes.
- Bake for 40-45 minutes or until chicken is golden and potatoes are tender.
- Optionally broil for 2-3 minutes for extra crispness.
