Ingredients

6 bone-in, skin-on chicken thighs

1.5 lbs baby potatoes, halved

4 garlic cloves, minced

4 tablespoons butter, melted

1/2 cup grated Parmesan cheese

1 tablespoon Italian seasoning

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. In a bowl, mix melted butter with garlic, Italian seasoning, salt, and pepper.
  3. Toss chicken thighs and baby potatoes in the garlic butter mixture.
  4. Spread evenly on the baking pan, skin side up.
  5. Sprinkle parmesan over the chicken and potatoes.
  6. Bake for 40-45 minutes or until chicken is golden and potatoes are tender.
  7. Optionally broil for 2-3 minutes for extra crispness.
  8. Garnish with fresh parsley and serve hot.
