Ingredients
1 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Instructions
1. In a large bowl, beat the peanut butter, granulated sugar, and brown sugar until light and fluffy.
2. Add the egg and vanilla extract. Beat again until smooth.
3. In a separate bowl, whisk together the flour, baking soda, and salt.
4. Gradually add the dry ingredients to the peanut butter mixture. Mix until just combined.
5. Scoop tablespoon-sized dough balls onto a baking sheet lined with parchment paper.
6. Press each ball with a fork to create a crisscross pattern.
7. Bake at 350°F (175°C) for 9–11 minutes, until edges are lightly golden.
8. Remove and cool on a wire rack for at least 10 minutes.
Notes
For best texture, do not overbake — cookies will firm up as they cool.
For even cookie size, use a cookie scoop or measure with a tablespoon.
Let cookies rest on the tray for a minute or two before transferring to the rack.
