Ingredients
2 chicken breasts or thighs
1 red bell pepper
1 zucchini
1 yellow squash
2 tablespoons olive oil
4 tablespoons BBQ sauce
1 teaspoon garlic powder
Salt, to taste
Pepper, to taste
1 tablespoon fresh parsley
Instructions
1. Slice chicken into portions and chop veggies into chunks. Preheat grill or oven to 400°F.
2. Lay out foil sheets, drizzle with olive oil, and layer chicken and veggies. Season with garlic powder, salt, and pepper. Brush with BBQ sauce.
3. Fold the foil into tight packets, crimping edges to seal.
4. Cook on the grill (medium heat) or in oven for 20-25 minutes until chicken reaches 165°F internally.
5. Carefully open packets (watch for steam), sprinkle with parsley, and serve hot.
Notes
For extra caramelization, open the foil in the last 5 minutes of cooking.
