Description

No Bake Turtle Mini Cheesecakes are a perfect blend of rich, creamy cheesecake filling over a buttery graham cracker crust, all topped with gooey caramel, glossy chocolate, and crunchy pecans. They require no oven time and make an elegant, indulgent dessert for any occasion.


Ingredients

12 graham crackers, crushed

6 tablespoons unsalted butter, melted

16 ounces cream cheese, softened

3/4 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1/2 cup caramel sauce

1/2 cup chocolate ganache or melted chocolate

3/4 cup chopped pecans


Instructions

1. Crush graham crackers into fine crumbs using a food processor or zip-top bag and rolling pin.

2. Combine crumbs with melted butter until well mixed.

3. Press mixture into muffin liners or silicone molds to form a firm crust. Chill while preparing filling.

4. In a bowl, beat cream cheese and powdered sugar until fluffy and smooth.

5. In a separate bowl, whip heavy cream until stiff peaks form.

6. Gently fold whipped cream into the cream cheese mixture with vanilla extract.

7. Spoon filling over the crusts and smooth the tops with an offset spatula.

8. Chill for at least 4 hours or overnight for best results.

9. Once set, drizzle caramel and chocolate over each cheesecake.

10. Sprinkle chopped pecans generously on top before serving.

Notes

For ultra-smooth filling, make sure your cream cheese is fully softened before mixing.

Add a pinch of flaky sea salt on top of the caramel for a sweet-salty twist.

Use silicone molds for the cleanest edges and easiest removal.
