Description

No Bake Buckeye Graham Crackers are a decadent yet simple dessert bar layered with crushed graham cracker crust, sweet peanut butter filling, and a glossy chocolate topping. They deliver all the flavor of traditional buckeye candies but require no baking at all. Perfect for parties, gifts, or a satisfying treat anytime.


Ingredients

2 cups graham cracker crumbs

1 cup unsalted butter, melted (divided)

1 1/2 cups creamy peanut butter

2 cups powdered sugar

1 tsp vanilla extract

2 cups semi-sweet chocolate chips


Instructions

  1. Line a 9×13 inch baking pan with parchment paper.
  2. Mix graham cracker crumbs with 1/2 cup melted butter. Press into the bottom of the prepared pan.
  3. In a large bowl, combine peanut butter, remaining 1/2 cup melted butter, powdered sugar, and vanilla. Stir until smooth.
  4. Spread the peanut butter mixture evenly over the graham base. Chill for 10-15 minutes.
  5. Melt chocolate chips using a microwave or double boiler. Stir until smooth.
  6. Pour chocolate over the chilled peanut butter layer. Smooth evenly.
  7. Refrigerate the pan for at least 2 hours or until chocolate is firm.
  8. Let sit at room temperature for a few minutes before slicing into bars.
