Ingredients
1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
8 corn tortillas
1 cup red cabbage, shredded
1 avocado, diced
1/2 cup cotija cheese, crumbled
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
1/4 cup chipotle mayo
Instructions
1. Combine shrimp with olive oil, paprika, garlic powder, cumin, chili powder, salt, and pepper in a bowl. Mix to coat evenly.
2. Heat a skillet over medium-high heat. Add shrimp and cook 1–2 minutes per side until pink and slightly charred. Remove from heat.
3. Prep toppings: shred cabbage, dice avocado, chop cilantro, and crumble cotija cheese. Set aside.
4. Warm tortillas over an open flame or in a dry skillet until soft and lightly charred. Keep warm in a towel.
5. Assemble tacos: layer cabbage, shrimp, avocado, cotija, cilantro. Drizzle with chipotle mayo and finish with a squeeze of lime.
Notes
Don’t overcook the shrimp—they only need 1–2 minutes per side.
Use fresh lime juice to brighten the flavor and cut through the richness.
Warming tortillas enhances texture and prevents them from breaking while folding.
