Ingredients
1.5 lbs boneless skinless chicken thighs
1 cup Greek yogurt (divided: ½ cup for marinade, ½ cup for sauce)
2 tablespoons lemon juice (divided)
2 tablespoons olive oil
3 garlic cloves, minced (divided)
1 teaspoon smoked paprika
1 teaspoon ground cumin
Salt and black pepper to taste
1 cup grated cucumber
1 teaspoon dried dill or 1 tablespoon fresh chopped dill
1 cup cucumber slices
½ cup thinly sliced red onion
1 cup shredded lettuce
4 large pita or flatbreads
Instructions
1. In a mixing bowl, whisk together ½ cup Greek yogurt, 1 tablespoon lemon juice, 1 tablespoon olive oil, 2 cloves of minced garlic, smoked paprika, cumin, salt, and pepper. Add chicken thighs and coat evenly. Cover and marinate for at least 30 minutes, preferably overnight.
2. To make the tzatziki, combine the remaining ½ cup yogurt with grated cucumber, 1 tablespoon lemon juice, 1 clove minced garlic, dill, and a pinch of salt. Chill in the fridge.
3. Heat a grill pan or outdoor grill over medium-high heat. Drizzle a little oil, then grill marinated chicken for 5–6 minutes per side until cooked through and slightly charred. Let rest, then slice into strips.
4. Prepare toppings: wash and slice cucumber, red onion, and lettuce.
5. Warm pita or flatbreads. Spread each with a spoonful of tzatziki, layer lettuce, grilled chicken, cucumbers, and onions. Add another dollop of sauce, fold, and wrap in foil or parchment.
Notes
For juicier chicken, use thighs instead of breasts and don’t skip the marinating time.
Keep veggies crisp by storing them separately if assembling wraps later.
Double the tzatziki if you love extra sauce—it also makes a great dip for veggies or pita chips.
