Ingredients

1 pound ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 1/2 cups cauliflower rice

1 cup spinach, chopped (optional)

4 ounces cream cheese

1/4 cup heavy cream

2 large eggs

1 1/2 cups shredded cheddar cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon Italian seasoning


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13 casserole dish.

2. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until translucent.

3. Add ground turkey and cook until browned, breaking it up with a spatula. Season with salt, pepper, paprika, and Italian seasoning.

4. Stir in cauliflower rice and spinach, cooking for 3–5 minutes until moisture is mostly evaporated.

5. In a mixing bowl, whisk eggs, then combine with cream cheese, heavy cream, and half of the shredded cheddar. Mix until smooth.

6. Pour the cheese mixture into the skillet with turkey and veggies. Stir to combine evenly.

7. Transfer the mixture into the greased casserole dish and spread evenly.

8. Top with the remaining cheddar cheese.

9. Bake for 25–30 minutes, or until bubbly and golden on top.

10. Let cool slightly before slicing and serving.

Notes

Cook off excess moisture: Be sure to sauté the cauliflower and turkey mixture until most moisture evaporates to avoid a watery casserole.
