Description

A hearty and crowd-pleasing twist on comfort food, this Mexican Tater Tot Casserole layers spiced ground beef, black beans, corn, salsa, and plenty of cheese under a golden blanket of crispy tater tots. It’s fast, easy, and packed with bold, zesty flavors.


Ingredients

1 lb ground beef

1 packet taco seasoning (or 2 tbsp homemade mix)

1/2 cup water

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (canned, fresh, or frozen)

1 cup salsa

2 cups shredded cheddar cheese, divided

1 bag (about 32 oz) frozen tater tots

Fresh cilantro, chopped (optional garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Stir in taco seasoning and 1/2 cup water. Mix well.
  4. Add black beans, corn, and salsa. Simmer for 5 minutes.
  5. Transfer the mixture into a greased 9×13-inch baking dish.
  6. Sprinkle half the cheese over the meat mixture.
  7. Arrange tater tots in a single layer over the top.
  8. Bake for 30 minutes or until tots are golden and crispy.
  9. Top with remaining cheese and return to the oven for 5-7 minutes until melted.
  10. Let rest a few minutes, garnish with cilantro, and serve.
