These crispy, herb-packed salmon patties are a flavorful Mediterranean-inspired dish made with canned salmon, fresh herbs, and zesty lemon. Quick to prepare and perfect for a healthy dinner or lunch meal prep.
Ingredients
2 cans (6 oz each) wild-caught salmon, drained and flaked
1/2 cup breadcrumbs (whole wheat or panko)
2 large eggs
1/4 cup finely chopped red onion
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
2 garlic cloves, minced
Zest of 1 lemon
1 tablespoon lemon juice
Salt and pepper to taste
1 tablespoon olive oil (for frying)
Instructions
- In a large bowl, mix together salmon, breadcrumbs, eggs, onion, parsley, dill, garlic, lemon zest, lemon juice, salt, and pepper.
- Form the mixture into 6 evenly sized patties.
- Chill the patties in the refrigerator for 20-30 minutes.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 4-5 minutes on each side until golden and cooked through.
- Serve warm with tzatziki, in a pita, or over a salad.
