Description

A golden, crusty sandwich with melted mozzarella, fresh basil, and zesty olive tapenade—all the best Mediterranean flavors tucked into a comforting grilled cheese. Crisp on the outside, gooey on the inside—this sandwich is perfect for lunch or a quick dinner.


Ingredients

2 slices artisan bread

1/2 cup mozzarella cheese, sliced

4 fresh basil leaves

2 tablespoons olive tapenade

1 tablespoon garlic butter or olive oil

1/4 teaspoon chili flakes (optional)


Instructions

1. Slice the bread into thick, even slices.

2. Spread the olive tapenade on one slice of bread.

3. Layer with mozzarella slices and fresh basil leaves.

4. Sprinkle chili flakes if using, and top with the second slice of bread.

5. Spread garlic butter or brush olive oil on the outer sides of the sandwich.

6. Heat a non-stick skillet over medium heat.

7. Place the sandwich in the skillet and press gently with a spatula.

8. Cook for 3-4 minutes per side until golden brown and the cheese is melted.

9. Remove from skillet, let it sit for 1-2 minutes, then slice and serve.

Notes

Use freshly sliced mozzarella for the best melt and flavor.

Don’t rush the grilling—medium heat ensures crisp bread and melted cheese.

Basil can be swapped for baby spinach or arugula for a peppery twist.
