Ingredients

1 lb ground beef

1 packet taco seasoning

1 can (15 oz) refried beans

1 cup frozen corn (or canned, drained)

1 can (10 oz) Rotel diced tomatoes with green chiles, drained

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 oz cream cheese, softened

½ cup sour cream (plus more for garnish)

1 tbsp olive oil

Salt and pepper to taste

Fresh cilantro, chopped (optional garnish)

Tortilla chips for serving


Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess grease.
  2. Stir in taco seasoning and 2–3 tablespoons of water. Simmer for 2 minutes.
  3. In a large bowl, mix cream cheese, sour cream, and refried beans until smooth.
  4. Add the cooked beef, Rotel tomatoes, and corn. Stir until combined.
  5. Spread the mixture into a greased 9-inch baking dish.
  6. Top with cheddar and Monterey Jack cheeses.
  7. Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden.
  8. Garnish with sour cream and chopped cilantro. Serve with tortilla chips.
