Description

This creamy Marry Me Chicken Orzo is a one-pot meal loaded with seared chicken, sun-dried tomatoes, tender orzo, and a rich Parmesan garlic cream sauce. Perfect for a weeknight dinner or special occasion, it’s comforting, quick, and sure to impress.


Ingredients

1 lb boneless, skinless chicken breasts or thighs, cut into chunks

1 tsp salt

½ tsp black pepper

1 tbsp olive oil

3 cloves garlic, minced

2 ½ cups chicken broth

1 cup heavy cream

½ cup sun-dried tomatoes, chopped

1 ½ cups orzo pasta

2 cups fresh spinach

½ cup grated Parmesan cheese

1 tsp Italian seasoning or dried thyme


Instructions

1. Season chicken with salt and pepper.

2. In a large deep skillet, heat olive oil over medium-high. Sear chicken on both sides until golden, then remove and set aside.

3. In the same skillet, sauté garlic for 30 seconds. Add sun-dried tomatoes and cook until fragrant.

4. Stir in chicken broth and heavy cream. Add orzo and mix well. Bring to a simmer and reduce heat to medium-low.

5. Cook the orzo for 10–12 minutes, stirring occasionally, until tender and creamy.

6. Add the chicken back into the pan. Stir in spinach and cover for a few minutes until wilted.

7. Add Parmesan cheese and Italian seasoning. Stir until cheese is melted. Adjust seasoning if needed.

8. Serve hot with extra Parmesan and cracked pepper.

Notes

For extra creaminess, stir in an extra splash of cream just before serving.

If reheating, add a bit of broth or water to loosen the sauce back to its silky texture.

You can make it vegetarian by swapping chicken with sautéed mushrooms or white beans.
