Description

These Maple Roasted Sweet Potatoes are tender, caramelized rounds glazed with earthy maple syrup, crunchy toasted walnuts, and fresh thyme. A comforting, flavor-rich side dish perfect for both everyday dinners and festive tables.


Ingredients

4 medium sweet potatoes

3 tablespoons maple syrup (plus extra for glaze)

2 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/3 cup chopped walnuts

2 teaspoons fresh thyme leaves


Instructions

1. Preheat oven to 400°F (200°C). Wash and scrub the sweet potatoes thoroughly.

2. Slice the sweet potatoes into 1/2-inch thick rounds. No need to peel unless preferred.

3. In a large mixing bowl, toss sweet potato slices with 2 tablespoons olive oil, 3 tablespoons maple syrup, cinnamon, and salt until evenly coated.

4. Line a baking sheet with parchment paper. Arrange sweet potato rounds in a single layer with space between them.

5. Roast for 20 minutes, flip slices, and roast another 15–20 minutes until tender and caramelized.

6. In a small saucepan over medium-low heat, add 1 tablespoon maple syrup and the chopped walnuts. Toast for 3–4 minutes until fragrant.

7. Transfer roasted sweet potatoes to a platter. Drizzle with the maple-walnut glaze and sprinkle with fresh thyme.

Notes

Use parchment paper to prevent sticking and ensure easy cleanup.

Let the walnuts toast just until fragrant—not too dark—or they’ll become bitter.

Add the thyme just before serving to preserve its fresh aroma and vibrant look.
