Ingredients
1 1/2 cups egg whites (about 10 to 12 large eggs)
1 1/2 cups granulated sugar (divided into 3/4 cup superfine + 3/4 cup regular)
1 cup cake flour
1 1/4 teaspoons cream of tartar
1/4 teaspoon salt
2 teaspoons vanilla extract
1/4 teaspoon almond extract (optional)
1/3 cup rainbow sprinkles (jimmies style)
Instructions
1. Preheat oven to 350°F (175°C). Do not grease your tube pan. Sift cake flour and 3/4 cup superfine sugar together three times; set aside.
2. In a large metal or glass bowl, beat egg whites on medium until foamy. Add cream of tartar and salt. Gradually add 3/4 cup granulated sugar and beat until stiff, glossy peaks form.
3. Sift the flour mixture over the egg whites in three parts, gently folding with a spatula each time to maintain volume.
4. Add vanilla and almond extracts, then fold in rainbow sprinkles gently to avoid streaking.
5. Spoon batter into the tube pan and smooth the top. Tap lightly to release large air bubbles.
6. Bake for 35-40 minutes until golden and springy to the touch.
7. Immediately invert the pan onto a bottle or cooling rack and let cool completely upside down.
8. Once cooled, run a knife along the sides and center tube to release the cake. Top with whipped cream and extra sprinkles before serving.

Use a completely clean, grease-free bowl and utensils when whipping egg whites to ensure maximum volume.
Do not grease your tube pan—this allows the batter to cling to the sides and rise tall.
