Tender lemon pepper–seasoned chicken bites paired with rotini pasta tossed in a creamy Cajun Alfredo sauce infused with roasted red peppers. This flavorful dish combines zesty brightness, smoky sweetness, and a gentle kick of spice for a restaurant-quality meal at home.
Ingredients
2 large chicken breasts
2 teaspoons lemon pepper seasoning
2 tablespoons olive oil
12 ounces rotini pasta
1 cup roasted red peppers
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Cajun seasoning
2 cloves garlic
2 tablespoons butter
Instructions
1. Cut chicken breasts into bite-sized pieces and season with lemon pepper seasoning.
2. Heat olive oil in a large non-stick skillet and sear chicken until golden and cooked through. Remove from skillet and set aside.
3. Cook rotini pasta in salted boiling water until al dente. Drain and set aside.
4. Blend roasted red peppers, garlic, and a splash of cream until smooth.
5. In a saucepan, melt butter, add pepper mixture, heavy cream, and Cajun seasoning. Simmer for 3–4 minutes.
6. Whisk in Parmesan cheese until sauce thickens.
7. Toss pasta with sauce, top with chicken bites, and garnish with parsley or basil.
Notes
For extra flavor, marinate chicken in olive oil and lemon pepper seasoning for 30 minutes before cooking.
Add more Cajun seasoning if you prefer extra heat.
When reheating leftovers, add a splash of cream or milk to restore sauce texture.
